Server – Kouklas Greek Eatery (Niles, IL)

Kouklas Greek Eatery is a high-volume, chef-driven restaurant focused on a shared, Mediterranean-style dining experience rooted in hospitality, precision, and flow.

Recently featured on WGN and NBC Chicago as one of the best new restaurants in Chicagoland , Kouklas is growing quickly as we prepare to open our 80-seat patio (which will be year-round) and expand into lunch service this summer .

Located in Niles, just 20–25 minutes from downtown Chicago , Kouklas offers the energy and volume of a city restaurant with easier access and parking.

We are building a team of career-minded hospitality professionals who take pride in their craft and operate at a high level.

This is not a traditional server position.

At Kouklas, servers are expected to guide the guest experience , not just take orders. You will lead tables through a curated, share-style progression of dishes, managing pacing, balance, and flow from start to finish.

We operate at a high level of volume and expectation:

• 250–330 covers per 5-hour shift
• 180 indoor seats + 80 outdoor seats

• High earning potential in a tip pool environment

• Experience in high-volume, full-service restaurants
• Ability to control tables, pacing, and guest flow
• Strong communication and a confident presence on the floor

• Professionalism, urgency, and attention to detail

• Guide guests through a shared, coursed dining experience
• Maintain awareness of timing, kitchen flow, and table progression
• Build balanced orders and deliver a seamless experience
• Support the full floor -- running food, assisting teammates, and maintaining service standards
• Develop strong food and beverage knowledge

Dinner service currently (5pm–10pm), with lunch launching this summer.
Weekend availability required.
